THE ULTIMATE POWER BOWL

Ingredients

Grain mix base:
1/4 cup white quinoa
1/4 cup red quinoa
1/4 cup green lentils
1/4 cup black lentils
2 cups water
2 tablespoons chopped fresh parsley
1 tablespoon fresh lemon juice
1/2 teaspoon salt

Vinaigrette base:
1/4 cup of your favorite vinegar, lime juice or lemon juice
1 1/2 tablespoons minced onion, garlic, scallion or shallot
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup olive oil

Preparation

Make the grain base: Rinse the quinoa and lentils in a fine mesh strainer, then pour into a medium saucepan with 2 cups water. Bring to a boil over medium heat.
